"Bruschetta" Pasta

Prepping the ingredients for this pasta reminded me of making bruschetta. The result is a garlicy pasta with fresh tomatoes.



 "Bruschetta" Pasta
Serves 2

1 cup Penne pasta
1/2 cup ricotta cheese
1 cup grape tomatoes, quartered
2 garlic cloves, minced
1 tablespoon olive oil
1 teaspoon white wine vinegar
Fresh basil
Salt and pepper

1. Cook pasta according to package directions.
2. Meanwhile, combine tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper.
3. Drain pasta and mix with tomatoes.
4. Stir in ricotta and serve. (Pasta will be warm, but not hot.)
