These Asian-style sweet potatoes make a easy and tasty side dish.
Sesame-Honey Sweet Potatoes
2 large sweet potatoes with skin on, cut into medium pieces
1 tablespoon olive oil
1 tablespoon honey
1 tablespoon soy sauce
1/2 teaspoon ginger
Salt and pepper
Sesame seeds, for garnish
Chopped green onions, for garnish
1. Combine sweet potatoes with olive oil, salt, and pepper. Roast at 450 degrees about 20 minutes, stirring occasionally. Sweet potatoes should be cooked through and browned.
2. Meanwhile, whisk together honey, soy sauce, ginger, and red pepper.
3. Remove potatoes from the oven and immediately coat with honey mixture.
4. Serve topped with sesame seeds and chopped green onions.
