Goat Cheese Potato Salad

Goat cheese makes a tangy sauce for these multicolored potatoes from Trader Joe's. This is best served warm topped with fresh parsley.






Goat Cheese Potato Salad
Serves 4

1 bag multicolored small potatoes
2 ounces goat cheese
2 tablespoons half and half
2 tablespoons mayo with olive oil
Salt and pepper
Fresh parsley

1. Cut potatoes into wedges. Place in salted boiling water and cook for about 20 minutes, or until potatoes are tender.
2. Meanwhile, mix together goat cheese, half and half, mayo, salt, and pepper. Add a few tablespoons of the water the potatoes are cooking in. Stir until creamy, adding more water if needed.
3. Drain potatoes. Immediately mix with goat cheese sauce. Serve topped with freshly cracked pepper and fresh parsley.
