Southwest Salad with Creamy Chipotle Lime Dressing

The highlight of this salad is the tangy dressing made with chipotles. I was inspired by a similar salad on the Nutmeg Notebook. I served this salad for Father's Day, along with this recipe from Chocolate Therapy for Crockpot Chicken Tacos.


Southwest Salad with Creamy Chipotle Lime Dressing
Serves 6-8

Romaine lettuce chopped
1/2 can black beans
1/2 can corn
1 avocado, diced
1 cup cherry tomatoes, halved
1/4 cup sliced red onion
1/4 cup light sour cream
1/4 cup light Kraft Mayo with Olive Oil
1 canned chipotle chili, finely minced
Juice from 1 lime
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste

1. To make dressing, combine sour cream, mayo, chipotle chili, lime juice, cumin, chili powder, salt, and pepper.
2. Toss lettuce, black beans, corn, avocado, cherry tomatoes, and red onions with dressing.
