Mojo de Ajo

I enjoy watching the Rick Bayless show Mexico - One Plate At A Time, but I haven't had the chance to make one of his recipes until now. This recipe for Mojo de Ajo is relatively simple, but time consuming. The result is a jar full of olive oil flavored with slow roasted garlic and lime juice that will last for weeks. Stay tuned in future blog posts for the ways that I used this Mojo de Ajo.


Mojo de Ajo
Makes 2 cups


4 large heads garlic
2 cups olive oil
1 teaspoon salt
1/2 cup fresh lime juice

1. Remove garlic cloves from skin. Mash each clove using the side of a large knife.
2. In pan, combine garlic, olive oil, and salt. Bake at 325 about 50 minutes, or until slightly browned.
3. Stir in lime juice and cook another 20 minutes.
4. With potato masher, mash garlic. Pour into jar or container.  Keep refrigerated until ready to use.
