Avocado and Roasted Red Pepper Sandwich

I recently shared a recipe for Southwest Turkey Sandwich with Sweet Potato Fries. Here's the recipe's vegetarian counterpart. Roasted red peppers are a great option for vegetarian sandwiches because of their intense flavor and hearty texture.

Avocado and Roasted Red Pepper Sandwich
Makes 2 sandwiches

2 slices cheddar cheese
1 avocado, sliced
2 roasted red peppers, drained
1 fresh baguette, cut into 2 slices
2 tablespoons mayonnaise with olive oil
1 lime
1 tablespoons of chipotle chili powder
2 green onions, finely chopped
2 romaine lettuce leaves, chopped

1. To make chipotle mayonnaise with green onions, mix mayonnaise, juice of 1 lime, 1 tablespoon chipotle chili powder, and green onions. Spread chipotle mayonnaise onto bread.
2. Top sandwiches with other ingredients.
