A simple salad for any occasion. I paired this with broccoli and rice.
Cucumber, Red Pepper, and Cilantro Salad
Serves 2
1 cucumber, diced
1 red pepper, diced
2 green onions, diced
1 tablespoon rice wine vinegar
1 teaspoon sesame oil
Cilantro
Combine all ingredients and serve immediately.

Thanks Suzy. I chose rice wine vinegar because I was thinking about cucumber salads that I've eaten in Thai restaurants. Also, I think rice wine vinegar and sesame oil pair well together.
