Feta and Sun-Dried Tomato Barley

Barley is an inexpensive, healthy food that deserves more attention from recipe makers. Here, it is dressed up with feta, sun-dried tomatoes, and fresh parsley for a tasty dish packed with fiber and protein.



Feta and Sun-Dried Tomato Barley
Serves 4

1 cup pearl barley
3 cups water
1/4 cup sun-dried tomatoes, diced
4 ounces crumbled feta cheese
Fresh parsley
Salt and pepper to taste

1. Combine barley and water in a pot. Bring to a boil. Simmer 30-45 minutes, or until barley is cooked.
2. Combine barley with sun-dried tomatoes, feta cheese, salt, and pepper.
3. Top with fresh parsley and serve.
