Baked Acorn Squash with Parmesan

Next time you're at the grocery store or farmer's market, pick up an acorn squash and make this easy savory recipe. I served this with Cranberry, Green Onion, and Almond Wild Rice.


Baked Acorn Squash with Parmesan
Serves 2

1 acorn squash
1 tablespoon olive oil
2 ounces Parmesan cheese, shredded
1 tablespoon rosemary
Salt and pepper

1. Cut acorn squash in half. Scoop out seeds.
2. Place in baking dish and drizzle with olive oil. Season with salt and pepper. 
3. Roast at 400 degrees for 40 minutes.
4. Remove acorn squash from oven. Top with Parmesan cheese and rosemary.
5. Return to oven and roast 20 minutes more, or until cheese is browned and squash is tender.

  1. Just made this last night. It was so delicious and so easy! I need to stockpile acorn squashes next time I go to the farmers' market.
